BURRITO BOWL WITH CILANTRO LIME RICE

INGREDIENTS:

1 pouch Grain Trust Cilantro Lime Rice
1 cup cooked shredded chicken or seasoned ground beef
1/2 cup canned black beans, rinsed and drained
1/2 cup canned or frozen corn kernels, thawed
1/4 cup pico de gallo or diced tomatoes
1/2 lime
2 Tbsp sour cream or Greek yogurt

GARNISH:

Fresh cilantro leaves, whole
Sliced fresh jalapeño, unseeded
Coarse black pepper
Flaked sea salt

DIRECTIONS:

  1. Cook the Grain Trust Cilantro Lime Rice according to the packet instructions. Once ready, fluff it gently with a fork and transfer to a serving bowl, creating a base layer on one side.

  2. In the same bowl, arrange the warm chicken or beef, black beans, corn, and pico de gallo in neat, distinct sections next to the rice, creating a colorful, organized composition.

  3. Add a generous dollop of sour cream in the center. Garnish with whole cilantro leaves, a few jalapeño slices, a twist of black pepper, and flaked sea salt.

  4. Serve with the lime half on the side for squeezing.
