Breakfast Fried Rice with Bacon & Garlic Egg

A quick and satisfying fried rice loaded with crispy bacon, chili-spiced rice, and a perfectly fried garlic egg on top. Great for breakfast, brunch, or any time of day.

Fried Rice

  • 4 spring onions, sliced (whites and greens separated)

  • 4 slices bacon, 

  • 2 garlic cloves, minced

  • 1 tbsp brown sugar

  • 1 tbsp crushed chili flakes

  • ¼ tsp sea salt

  • 300g Grain Trust Hibachi Fried Rice, cooked (about 1½–2 cups)

  • 2 tbsp tamari, plus more to taste

  • 2 tbsp water or stock

  • 2 tsp sesame oil

  • 1 tbsp roasted peanuts, for topping

Garlic Egg

  • 1 garlic clove, minced

  • 2 large eggs

  • Salt and pepper, to taste

Instructions

  1. Prep everything before you start. — Slice the spring onions, separating the white/light green parts from the green tops. Heat a non-stick pan over medium to medium-high heat. 

  2. Add the garlic, white spring onion parts, brown sugar, chili flakes, and salt. Sauté for about 1 minute until the garlic softens — don't let it burn.

  3. Add the Grain Trust Hibachi Fried Rice and tamari, breaking up any clumps with a spatula. Splash in the water or stock. Stir-fry until hot and toasty. Taste and adjust tamari. Toss in the green spring onion tops.

  4. Divide the rice between two bowls and drizzle 1 tsp of sesame oil over each while still hot.

  5. Heat a small pan over medium-high heat with a generous splash of neutral oil. Add the garlic and sizzle briefly, then crack in the eggs, keeping them separate. Spoon hot garlic oil over the whites until set and edges are crispy. Season with salt and pepper.

  6. Slide a fried egg onto each bowl and serve with bacon on the side immediately.

Tips

Grain Trust Hibachi Fried Rice: Cook according to package directions and cool before frying for best results.

Variations: Try adding shredded carrots, spinach, mushrooms, or shredded cabbage.
