SALMON WITH WILD RICE PILAF

Prep time: 20 minutes
Cook time: 45 minutes

INGREDIENTS
1 pound wild salmon (or fish of choice)
1 pint cherry tomatos
1/3 cup julienned mint
1 cup olive olive
1 Tbls chilli flakes
1pouch of Grain Trust Wild Rice Blend Pilaf

DIRECTIONS

  1. Cut the tomatoes in half and place in a small saucepan with olive oil and chili flakes. Cook on very low heat for45 minutes, or until the oil and chill flakes have infused and the tomatoes are tender and skin remains in tact.

  2. Cook the salmon. Place a tablespoon of oil in a large skillet and set to medium high heat. Cook the fish withskin side up for 6 minutes. Flip and cook another 6 minutes, or until fully cooked.

  3. Meanwhile, cook the Grain Trust Wild Rice Blend Pilaf according to the instructions.

  4. When the cherry tomato compote is still warm, add the julienned mint, stirring to combine. Plate theGrain Trust Wild Rice Blend Pilaf, salmon, and top with the cherry tomato compote.
